Balsamic Pork Medallions

Last time I shared with you all the Cajun Chicken Tortellini.  Here’s another wonderful recipe that was a hit with my kids and husband!  This meal took 30 minutes to make.  🙂

2 cups sliced fresh mushrooms
2 cups small broccoli florists
2 tablespoons butter
12 ounce pork tenderloin
Salt and ground black pepper
2 ounces prosciutto, cut into bite-size strips
1/4 cup balsamic vinegar
1 tablespoon packed brown sugar
1. In a large skillet cook mushrooms and broccoli in 1 tablespoon of the hot butter over medium high heat and 3 minutes or until crisp-tender, stirring occasionally. Remove vegetables from skillet; set aside.
2. Meanwhile, trim fat from pork; cut pork into 1/2 inch slices. Sprinkle pork with salt and pepper. Add to skillet and cook in remaining 1 tablespoon hot butter for 4 to 6 minutes or until juices run clear (160F), turning once.
3. Add prosciutto, vinegar, brown sugar, and vegetables to skillet; heat through.
  • Instead of buying a pork loin, I bought pork loin chops.  Way easier and I didn’t have to cut it!  That saved me at least 3 to 5 minutes.
  • Mix the vinegar and brown sugar BEFORE adding it to the skillet.  Makes it easier to stir.
